Now, right off the bat, I want to lay this out on the table for you: I’m no Martha Stewart. More often than not, I forget an ingredient or take liberties that the recipe author never intended or do something terrible when it comes to the presentation, so even if it tastes good, it looks hilariously bad. I wanted to confess my non-Martha status so that you know you can trust me when I say something is simple and foolproof and delicious . . . I’m not messing around,because I’m not a terribly gifted baker!
When Toni invited me to share a recipe, it didn’t take much brainstorming to know which cookie I ought to share. These Chewy Chocolate Cookies with White Chips are definitely in my top 5 favorite desserts. They are rich, fudgy, and delicious, don’t require any unusual ingredients, and are so fast to whip up (with only one dirty bowl to wash at the end—I’m not the only one who avoids recipes that use too many dishes, solely because I don’t want to wash that many, right?). And they always seem to turn out just right—that alone makes them a winner in my book!
Chewy Chocolate Cookies with White Chips
1 cup butter (I have also used 1/2 cup butter and 1/2 cup shortening—either way works great!)
2 cups white sugar
2 teaspoons vanilla
2 cups flour
3/4 cup unsweetened cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
1 + 2/3 cups white chocolate chips
Preheat oven to 350. Mix together the butter, sugar, eggs, and vanilla.
Add the flour, cocoa, baking soda, and salt. Mix thoroughly.
Stir in chips. Roll dough into balls and bake on ungreased cookie sheet for 8 minutes.
Cool completely on sheet.
Easy peasy! So fast and simple to make, but such an awesome tasty payoff. I hope you enjoy!

Hooray for one bowl recipes! I know Ant would really appreciate it if I made more of those instead of filling the entire sink and surrounding counter top with every mixing bowl, utensil, and baking sheet we own! But you know the rule; the cook doesn’t have to clean the kitchen…at least in our house they don’t. 😉
